His team found that vitamin C is only responsible for a small portion of the antioxidant activity. Instead, almost all of this activity in apples is from phytochemicals.

Eating 100 grams of fresh apple with skins (equals about 1 small apple - researched and added by Paul Gunn) provided the total antioxidant activity equal to 1,500 milligrams of vitamin C.
